Chocolate Chip and Toasted Hazelnut Cookie Recipe

Did you know that the 4th of December is National Cookie Day? I didn't until recently! I discovered it on a blog planner that was sent on an email and thought... oh hello, is this the universe trying to tell me I should be eating more cookies?! Well universe, I hear you loud and clear, say no more. As if December couldn't get any better already - an extra excuse for even more food. I really love just simple chocolate chip cookies rather than the double chocolate or white chocolate ones, and decided to share this Chocolate Chip and Toasted Hazelnut recipe for the occasion. The recipe is really easy, really tasty and what better reason to cook them than on National Cookie Day?

I bought whole hazelnuts for this and toasted them in the oven, but this then meant I had to remove the bitter 'skin' (the dark bits) and this took forever. In hindsight I should have just bought pre-chopped ones and then toasted the bits lightly. If however you're like me and love to make life difficult - put the oven on 180 degrees celsius (fan) and leave them in the oven for about ten minutes, given them a turn about half way through. If you don't have a fan oven then you can increase the temperature a bit or leave them for longer. You will know when they're ready as they turn a really nice dark brown colour and they smell amazing. Be careful not to burn them. When they've cooled down out of the oven pick up handfuls and rub them together, the skins will just fall off. If you buy chopped hazelnuts they probably won't need as long in the oven so just be careful. Anyway on to the recipe!

Ingredients:
  • 150g Unsalted Butter
  • 125g Light Brown Sugar
  • 100g Caster Sugar
  • 1 Egg
  • 225g Plain Flour
  • 1/2 Tsp Bicarbonate of Soda
  • Pinch of Salt 
  • 200g Chocolate Chips (mine probably had more like 100g as I had eaten nearly half of them)
  • 50g Hazelnuts (you can add more or less depending on taste)

Method: 
  1. Preheat the oven to 200C /180C (fan)/ Gas Mark 6
  2. Put the hazelnuts on a flat tray in the middle of the oven. Leave for ten minutes, turning half way through and then remove. Put to one side to cool down.
  3. Put the butter and both sugars into a bowl and mix together. Then beat in the egg.
  4. Add the flour, bicarb and salt to the bowl. Mix together with a spoon to form quite a stiff dough.
  5. Take the skins off the hazelnuts (or not if you had the common sense to buy pre-chopped nuts), put in a sealable bag and bash with a rolling pin until crushed into small pieces.
  6. Add hazelnuts and chocolate chips to the dough and mix together. 
  7. Form cookies from equal portions of dough and put onto a try lined with grease proof paper. Bake in the oven for 10-12 minutes until golden brown and slightly soft in the centre.
